Principle of the Assay: NEX catalyzes the degradation of xylan into reducing oligosaccharides and monosaccharides in a neutral environment, and further develops a color reaction with 3,5-dinitrosalicylic acid in a boiling water bath, and has a characteristic absorption peak at 540 nm. The color of the reaction liquid is proportional to the amount of reducing sugar produced by enzymatic hydrolysis, and the NEX activity can be calculated by measuring the rate of increase of the absorbance at 540 nm.
